Irit Dulman workshop was an amazing. It was very organised and gave me a good first hand experience of the ecoprinting technique. Couple if things I felt could be incorporated,
One, some theory information about the local plant species and the colours they'd yield and 
Second, some general knowledge of chemistry, like chemical bonds, colour affinity of plant dyes to various materials, alkaline and acidic medium,etc..
I think a general overview of these things could be a good kickstart for people perusing further exploration in this direction!
